Domaine La Rouviole AOP Minervois Cuvée SELECTION 2012

The Blend : 70 % Syrah, 30 % Grenache.

The Harvest : We hand harvest in September. The vines are 30 years old, with yields of 40 HL.

Wine Making Process : We de-stem our grapes and practice traditional vinification of each grape variety separately.

There is a vatting time of 2 weeks and the fermentation process is in stainless steel tanks.

Aging : One year in French oak barrels (new, second & third wine )and in tank. Then the wines are blended once the best balance has been found.

Production : 11000 bottles and 252 magnums.

Serving Suggestions : Delicious with roast duck or entrecôte.

Optimal Serving Temperature : 15°C.
