Domaine la Rouviole - AOP Minervois - Cru la Livinière 2012

The Blend : 49% syrah, 51 % grenache.

The Harvest : After disbudding in May and a green harvest in July, we hand harvest twice in September, picking  only the finest  grapes  with optimal maturity from the very best plots of the vineyard.

The vines are 40 years old, with yields of  30 HL.

Wine Making Process : We de-stem our grapes and practice traditional vinification of each grape variety separately.

The vatting time is 3 weeks; the fermentation process is in stainless steel tanks.

Aging : One year for the Syrah  in French and American oak barrels (new  & second  wines).

The Grenache is aged in stainless steel tanks to keep its purest expression of red fruit and finesse.

Then the wines are blended once the best balance has been found.

Production : 8000 bottles and 105 magnums.

Serving Suggestions : Great  with leg of lamb or a rib steak.

Optimal Serving Temperature : 15°C.

All our wines are made exclusively from our own grapes

Aged, matured and bottled at the estate.
